chopped fresh cilantro | 2 tablespoons |
dry-packed sea scallops, small side muscle removed | 1 pound |
ground cumin | 1/2 tsp |
cayenne pepper | ¼ teaspoon |
chipotle powder | ¼ teaspoon |
salt | ¼ teaspoon |
fat (butter, olive oil, or coconut oil) | 1 tablespoon |
avocado soup with scallops or shrimps的做法
To make the soup: In a blender, combine the avocados, chicken stock, lime juice, and cilantro and puree until smooth. Refrigerate until ready to serve.
Meanwhile, to make the scallops: Place the scallops on a paper towel and pat dry.
In a small bowl, combine the cumin, cayenne, chipotle powder, and salt. Sprinkle the spice mixture over both sides of the scallops.
Preheat a large skillet over medium-high heat. Add the fat and when hot, add the scallops to the pan. Let them cook undisturbed until you have a nice brown crust on the first side, 2 to 3 minutes. Flip the scallops and cook another 2 or so minutes, until almost cooked through
