用料  

Hass avocados, pitted and peeled 3
chicken stock 3 cups
lime juice 2 tsp
chopped fresh cilantro 2 tablespoons
dry-packed sea scallops, small side muscle removed 1 pound
ground cumin 1/2 tsp
cayenne pepper ¼ teaspoon
chipotle powder ¼ teaspoon
salt ¼ teaspoon
fat (butter, olive oil, or coconut oil) 1 tablespoon

  1. To make the soup: In a blender, combine the avocados, chicken stock, lime juice, and cilantro and puree until smooth. Refrigerate until ready to serve.

  2. Meanwhile, to make the scallops: Place the scallops on a paper towel and pat dry.

  3. In a small bowl, combine the cumin, cayenne, chipotle powder, and salt. Sprinkle the spice mixture over both sides of the scallops.

  4. Preheat a large skillet over medium-high heat. Add the fat and when hot, add the scallops to the pan. Let them cook undisturbed until you have a nice brown crust on the first side, 2 to 3 minutes. Flip the scallops and cook another 2 or so minutes, until almost cooked through
