用料  

whipped cream
heavy cream, chilled 1 cup
sugar 2 teaspoons
vanilla extract 1 teaspoon
freshly grated lemon zest 0.5 teaspoon
Spongy cake
egg 2
granulated sugar 0.8 cup
whole milk half cup
unsalted butter half stick (4 teaspoons)
vanilla extract 0.5 teaspoon
all purpose flour or cake flour 1 cup
baking powder 1 teaspoon
salt 0.25 teaspoon

Strawberry shortcake的做法  

  1. Whisk eggs and sugar

  2. Ad the dry ingredient to sift well.

  3. Combine milk and butter and heat (microwave or on oven) to just under a boil. Add vanilla extract.

  4. (Optional) Take out about 2 cups of the cake batter into a separate mixing bowl, and with a hand whisk add the hot milk-butter to that. Whisk vigorously. Add the "liaison" back into the remaining batter in the mixer bowl.

  5. Pour batter to a 9 or 8" pan

  6. Bake in preheated oven at 350F for 35 min

  7. For whipped cream, using the whisker to beat the heavy cream, sugar, vanilla, and lemon zest until soft peaks form.
